If you try to open a UTF-8 file, the encoding'll be UTF8 regardless of 
what you specify.
The newely created document is assumed to be utf8 even if your 
default encoding is not, till you save it.

It's fine here!

Really strange, This don't work even in gedit. It seems to be a problem 
with my window manager or a bug in Gtk.
