If the people involved (those who will actually be there) are able to
move it to Friday then great. Otherwise, just leave me out of the
committee and move on without me (for good).

I don't see any problem in moving it to Friday (or even to Saturday, or any date later when everybody can be there).

The most important thing is to have all people involved present, rather than doing a hasty unfruitful meeting.
